A Journey of Fermented Excellence

Finca Chambaku Coffee

At Finca Chambakú, innovation brews in every bean. Under Juan Felipe Restrepo's vision, only the ripest cherries, measured for sugar content, undergo a 183-hour anaerobic fermentation in a bespoke bioreactor. This unique Lactic-K method employs a Water Kefir culture, nurtured by the Restrepo family on sugarcane juice, enhancing the beans with complex flavors. Post-fermentation, a specialized silo-greenhouse method ensures an even 14-day drying period. The result is a distinguished Caturra varietal from Manizales, Colombia, crafted at 1450-1600 meters above sea level, promising a taste of adventurous meticulousness in every cup.
