Chris and Missy Wallace, the entrepreneurial couple behind Whittle Bird Coffee, are transitioning from a mobile coffee cart to a permanent cafe location in Guilford, Maine. After initially serving their beverages and baked goods at various farmers markets and events around the state, they faced logistical challenges that prompted them to seek a more stable setup. Their new establishment, Whittle Bird Coffee + Kitchen, will be located at 4 North Main Street and is set to open next week. This new space will not only offer the same beloved items from their coffee cart but will also expand its food menu. The Wallaces plan to host events and eventually transform the upstairs rooms into a cozy "micro hotel." Their journey from North Carolina to Maine has been marked by a strong community response and a desire to create a welcoming space that builds on the legacy of the previous tenant, Craft Cafe. The couple has prior experience running coffee shops in North Carolina and South Carolina, which they will bring to their new venture in Guilford.
