Migas Coffee, co-founded by Marisol Jurado and Alex Merriex, opened last month in Denver’s Green Spaces Market after a two-year journey. The shop’s name, derived from the Spanish word for "friends," reflects its mission of fostering community. Jurado, a therapist who became sober in 2018, found solace and connection through coffee, which inspired her to open Migas with Merriex, a finance professional. Despite setbacks with licensing and zoning, the shop now serves specialty drinks like the Barista Baddie and Matcha Mami. Jurado balances her roles as both therapist and barista, grateful for the chance to create a welcoming space for all. She envisions Migas growing beyond its current small bar space, continuing to serve as a hub for meaningful connections.
