Cassidy Mutchler, a former radiology technician, has turned her lifelong dream into reality by opening Saddle Up Espresso, a mobile coffee trailer in Lennox. After eight years in healthcare, Mutchler decided it was time to follow her passion for coffee and horses. Her new venture serves a variety of beverages, including espresso, cold brew, and specialty hot chocolates, with a touch of faith—each drink comes with a Bible verse sticker. This idea was born from her morning drives listening to Joyce Meyer podcasts, which inspired her to take the leap despite waiting for the "right time." The coffee beans are sourced from Sturgis Coffee Co. and Dark Canyon Coffee, bringing a piece of her hometown into her new business. Mutchler balances her new role with occasional work at Sanford Health, driven by her dedication to both her community and her love for horses. The mobile café has received overwhelming support from friends, family, and the local community, making Mutchler's dream a heartwarming success.
