Bikini Barista Stand Transforms into Family-Friendly Ruby’s Espresso

The infamous Hillbilly Hotties bikini barista stand in Everett, known for its scantily clad baristas serving coffee, has undergone a transformation. Now rebranded as Ruby’s Espresso, the establishment aims to create a family-friendly environment under new owners Chellce and Tyler McCaffery, who named the stand after their newborn daughter, Ruby. The new look features a white and black trim aesthetic, marking a significant departure from its predecessor's controversial image. The transformation follows a lengthy legal battle over the city's dress code, which resulted in a $500,000 settlement for the previous owner, Jovanna Edge, after claims of unconstitutional restrictions. Despite this change, the Everett City Council has adjusted the dress code to align with lewd conduct laws, allowing some flexibility in attire. The McCafferys aspire to expand Ruby's Espresso while maintaining a wholesome, country cottage theme, hoping to build a lasting legacy for their daughter. Meanwhile, other bikini coffee stands in the area, such as Teeny Bikini and Chicka Latte, continue to operate.
